10 Philippe Vancayseele NEW 2011 Philippe Vancayseele has been passionated by chocolate since his childhood and therefore became quickly captivated by the variety of flavours and origins of this sweet delicacy. Moreover, at an early age he was eager to learn everything about the history and production of chocolates. After the successful completion of his studies in pastry, and specializations in chocolate and confectionery at the Culinary Institute (COOVI-PIVIT) in Brussels, he worked for several quality chocolate makers in Belgium. He has always shared the passion and enthusiasm that he has for the product, first as school teacher and since 1994 as global technical advisor for chocolate producer Callebaut. It gave Philippe the opportunity to expand his knowledge and creativity on a top level. 12 Colours Chocolate World proudly presents its new collection of AZO free colors, meaning the entire range of our food colorants is now 100% AZO-dye free. To explain why we took the decision to ban all AZO-dye containing colorants, it s important to know what AZO dyes are. AZO dyes are colorless particles, which have been colored using an AZO compound. Many AZO dyes are non-toxic, although some have been found to be harmful for health. Some of these AZO dyes are used for the production of food colorants, the so-called E-numbers. Following E-numbers are known to contain harmful synthetic colorants: E102, E104, E110, E122, E124 and E129. To preserve the safety of our customers & the final consumer, Chocolate World decided to suspend the sale of any colorant with AZO dye. 12

14 Showpeels Showpeels are thin silicon sheets with pre-embossed patterns on one side. Just cut out the pattern, dip it in hot isomalt, then peel back the silicon revealing an intricate pattern ready for use. Few drops of color in your isomalt is enough to give your showpiece a crystal-like look. Airbrush some dark highlights around the outer edges and your sculpture will show its best detail.
