12 Get Behind Mrs SA Die wêreld aan haar voete Die vurige Lynné de Jager vertoonwoordig Suid-Afrika later vanjaar by die glansryke Mev. Wêreld-kompetisie in China. Dié skoonheidskoningin van Brooklyn gesels met Natashia Slabbert oor haar drome vir die Mev. Wêreld-kroon en lig die sluier oor wat soms agter die skerms aangaan. Ek is glad nie n pageant poppie nie, erken die plattelandse nooi met n helder laggie terwyl sy haar koppie tee stadig om en om roer en die koue herfs skemerlug soos n kombers om ons toesak. Ek is heel gemaklik in plat skoene en n bolla op my kop en voel nie ek hoef heeldag soos n skouperd rond te loop nie, sê sy met n skalkse glimlag. Wag, ek weet nie of skouperd heeltemal die regte woord is nie, sê-vra sy met n ondeunde blik in haar oë terwyl sy oor die rand van haar spierwit koppie na my loer. Die vurige Lynné de Jager, Mev. SA 2011/2012, is beslis nie bang om n ding op sy naam te noem nie. Dié smeulende donkerkop verteenwoordig Suid-Afrika in September by die glansryke Mev. Wêreldkompetisie in China en dit gons in binnekringe dat onse Mev. SA een van die gunstelinge is om met die kroon weg te stap. Maar wat reken die plattelandse nooi, wat in die klein dorpie van Ermelo grootgeword het, is haar kanse om dié internasionale titel later vanjaar in te palm? Wel, ek wil baie graag wen. Die beste posisie wat n Mev. SA nog by n Mev. Wêreld-kompetisie kon behaal is die Top 6 ek hoop om dit te verander. Haar selfvertroue is aansteeklik moontlik dié karaktereienskap wat later vanjaar in haar guns kan tel. Alhoewel sy oorborrel van selfvertroue en gemaklik is in haar eie vel, bly haar platskoenvoetjies egter plat op die aarde en is daar geen arrogansie by haar te bespeur nie. n Belofte wat Lynné aan haarself gemaak het aan die begin van haar Mev. SA reis n paar jaar gelede - n belofte om nederig te bly en nie die glans na haar kop te laat gaan nie. Om beslis nie soos n skouperd rond te trippel nie. Dit is só maklik om iemand anders in hierdie bedryf te word. Maar ek hoef nie soos iemand anders te lyk of op te tree nie. Ek kan net myself wees. Dit is die een belofte wat ek aan myself gemaak het toe ek hierdie wêreld betree het om getrou te bly aan myself, maak nie saak wat nie. Hoekom nou verander? verduidelik sy. Dit is egter makliker gesê as Dit is só maklik om iemand anders in hierdie bedryf te word gedaan in n internasionale bedryf wat soms bekend staan vir sy dramas en divas, oppervlakkige glimlaggies en wêreldvrede. Talle Hollywood-rolprente en skinderblaaie het al behoorlik die draak gesteek met die skoonheidsbedryf en oor wat regtig agter die skerms aangaan. Is die deelnemers dan regtig so katterig as wat hierdie gerugte uitmaak? Lynné erken dat dié stories nie altyd blote mites is nie, maar dat daar soms waarheid in hierdie Hollywood persepsies steek. Sy het al self n paar keer deurgeloop. Sjoe, deelnemers is soms verskriklik bitsig. Ek het n groter liggaamsbou ek meen ek dra nie n nommer 30 nie ek is n 36. Maar ek was nog nooit so maer in my lewe as tydens die Mev. SA-kompetisie nie. Net voor ek op die verhoog in my swemkostuum moes loop het een van die deelnemers vir my gesê, Ag dit is so jammer dat jy nooit maer sal wees nie. Gelukkig was ek seker met my eie identiteit en het my nie daaraan gesteur nie. Ek het net gedink smile and wave. Haar eerlikheid is verfrissend dié Pretoriase skoonheidskoningin trek nie sommer n blink baadjie bo-oor n brulpadda aan nie. Daarom is sy ook nie huiwerig om haar mening te lug oor skoonheidskompetisies vir kinders nie. Sy voel sterk dat ouers versigtig moet wees as dit by sulke kompetisies kom. Veral as n jong meisie nog nie weet wie sy is nie en nie seker is oor haar karakter en identiteit nie want dit kan jou breek. Dit is heeltyd n mental game en as jy onseker oor jouself is kan dit jou regtig 12 Get It Pretoria June 13

13 gooi. Daar is telkens n nederigheid en n sagtheid aan die pragtige donkerkop wat gedurende haar onderhoud deurskemer veral wanneer sy oor kinders praat. Die 28-jarige Pretorianer was as Mev. SA nou betrokke by die Hunger and Thirst Foundation n voedingskema vir kinders wat fokus om volhoubare oplossings te bied. Sy kon daarin slaag om R vir dié liefdadigheidsorganisasie, wat bitter naby na aan haar hart lê, in te samel. Die Hunger and Thirst Foundation sal altyd vir my uitstaan en is baie na aan my hart. Dit was ongelooflik om te sien hoe die kinders by die projek baat en gewig optel. Lynné wil ook graag eendag haar eie rugbyspan, of bus vol kinders, saam met haar man Wilhelm grootmaak en sy voel die tyd is nou reg. Die egpaar, wat onlangs hulle vierde huweliksherdenking gevier het, het hulle ongebore kindjie in 2009 verloor na n traumatiese ervaring toe n swanger Lynné en n vriendin in Germiston gekaap is. Die rowers het skote op die vroue afgevuur en hul rakelings gemis. Die volgende dag het die paartjie die baba verloor. Dít na die pasgetroude paartjie n paar maande vroeër deur sewe gewapende mans tydens n gewapende huisroof aangehou is. Lynné het intussen deur die seer gewerk en glo sy het met meer meegevoel vir ander mense aan die ander kant uitgekom. Daarom wil sy ook graag in haar rol as skoonheidskoningin ander bystaan in nood en hulle bemoedig. Aan die begin het almal vir my gesê alles gebeur met n rede. Ek het gedink, Ag, sjoesh man. Dit is nie iets wat jy dan wil hoor nie. Ander het weer geïnsinueer dat ons iets verkeerd gedoen het. Dit was baie seer en n moeilike tyd. Ek kon glad nie verstaan waarom dit gebeur het nie. Nou het ek vrede, ek verstaan 100%. Ek wil ander aanmoedig om net te bly glo en jou vertroue in God te plaas daar is n groter prentjie, sê sy sag. Dit is na hierdie traumatiese ervarings wat Lynné, wat voorheen voltyds Pilates klasse (onder andere vir die Blou Bulle) aangebied het, en hier en daar modelwerk gedoen en in musiekvideos verskyn het, besluit het om haar drome voluit na te jaag. 14 Get Behind Mrs SA n Paar jaar later is sy as Mev. SA gekroon. Dit was my heel eerste kompetisie ooit. Ek wou graag my eie brand stig en het gehoop Mev. SA kan my groot deurbraak wees. Alhoewel ek glad nie die bedryf geken het of geweet het wat om te verwag nie, het alles net in plek geval. Toe die groot oomblik aanbreek, het ek net gedink, Lynné, besef jy jou hele lewe het nou net verander en dat dit waaroor jy gedroom het, nou net gebeur het? Dié passievolle vrou droom nou oor die Mev. Wêreld-kroon en die platform wat hierdie titel moontlik kan skep om n verskil in ander se lewens te maak. Is daar al n paar vlinders wat in haar maag rondfladder oor dié groot geleentheid? Ek begin nou baie uitsien en het al begin oplees oor die weer en bietjie Mandaryns - n paar maklike frases in elk geval - begin leer. Ek raak nou regtig opgewonde, borrel sy. Ek sien werklik uit na die reis en kan nie wag om te sien wat in China gebeur nie. * Deel in Lynné se opwindende reis na die aanloop van die Mev. Wêreldkompetisie deur haar te volg op Twitter Wat jy nie oor Mev. Suid-Afrika weet nie * As ek op n eiland saam drie mense gestrand moes wees hoop ek dit is saam met my man Wilhelm, Jamie Oliver en n top entertainer of komediant wat ons kan vermaak. * My gunsteling stel winterpajamas is my snoesige charcoal slipper boots, bloedrooi knee-high sokkies, n ou swart Adidas sweetpakbroek (die gemaklikste broek in die wêreld) en n pienk hemp. * Die een kledingstuk in my kas wat my soos n miljoenêr laat voel is my swart high-waisted broek met wye pype. Ek kan altyd enigiets saam dit aantrek en fantasties voel. * Die eienskap wat ek die meeste in ander mense bewonder is eerlikheid. Maak nie saak wat die ander persoon sê nie, dit vat moed om die waarheid te praat. Al is dit nie altyd lekker om te hoor nie, waardeer ek dit as mense eerlik is. * My guilty pleasure (Achilles-hiel) is beslis skoene. Ek het verskriklik baie skoene. Ek is dol oor gekleurde skoene en ook enige skoene wat anders is. * My top skoonheidswenke is moet nooit met enige grimering gaan slaap nie en beskerm jou vel teen die son. 16 Get Acting Primadonna Die sprankelende Simoné Nortmann het onlangs haar buiging in 7de Laan gemaak. Dié belowende aktrise praat openhartig met Get It oor hoe die verlede se seer haar vir hierdie opwindende deurbraak in haar loopbaan voorberei het. Daar is nie n sweempie van rebelsheid in die petite blondekop te bespeur nie. Simoné Nortmann se openhartigheid en nederigheid is verfrissend - n rariteit in die genadelose vermaakliheidsbedryf. Dié 23-jarige aktrise het onlangs bekendheid verwerf vir haar rol as die parmantige tiener, Nadia, in 7de Laan. Sy verskil egter wêrelde van die rebelse skoolmeisie wat sy in Suid-Afrika se gunstelingsepie vertolk. Haar grou oë vonkel n warm uitnodiging en haar oop glimlag is opreg waar sy met Get It oor die opwindende nuwe wending in haar loopbaan gesels. Dit is duidelik dat die Pretorianer met die sagte Kaapse aksent n hart het vir die opstandige tiener in wie se skoene sy met sulke ywer geklim het. My karakter, Nadia, is n graad 11-meisie wat wegloop van die huis om haar pa in Johannesburg op te soek. Ek dink ek het sulke gróót gesigsuitdrukkings gegooi hulle het nie geweet wat om met my te maak nie, skerts sy terwyl sy snaakse gesigte trek. Sy het onmiddellik koers verander na die BA-Tale rigting en na vier jaar haar Drama-graad aan die Universiteit van Stellenbosch einde 2012 voltooi. Aan die begin van hierdie jaar het die petite blondekop met haar borrelende optimisme en skerp sin vir humor se lewenspad weereens haar amper weg van die verhoë en vermaaklikheidswêreld gelei nadat sy besluit het om in die onderwys verder te studeer. Ek is nog altyd lief vir kinders en het na die dramagraad, na ek baie opsies versigtig oorweeg het, besluit om die HOD te doen. Ek het egter in my tweede dag in die klas sterk ervaar hierdie is nie my roeping nie. Ek het gevoel die Here het groter planne met my en ek moet net daarin glo. Ek hoef nie te compromise nie, ek kan doen waarvoor ek regtig lief is, verduidelik sy passievol. Enkele dae na Simoné die onderwysstudies gestaak het in n skuif wat sy beskryf as n reuse sprong van geloof, het die rol in 7de Laan haar pad gekruis. Ek hoor gedurig hoe akteurs van die een oudisie na die ander oudisie gaan sonder enige terugvoer. Of dat daar vir jou gesê word dat jy n call back van n oudisie dalk eers na vier jaar kan kry. 19 Get Soulful Rock & Roll dreams Andries Botha, Erasmuskloof s quintessential rocker and former frontman of popular rock bands like Georgia and Mean Mr Mustard, is releasing his new solo album soon. The family man chats to Get It about the language of music, mixing it up on his new album and the crazy life of rock and roll. Text: Natashia Slabbert. Photographer: Ryno Ellis As a 10-year-old boytjie you picked up a guitar for the first time. Is this where your love for music began? That is exactly where it all began. I grew up in a home where music formed part of our daily existence. I remember my dad playing guitar on the small stage in our home when I asked him, What is that? Then and there my dad showed me the chords A, D and E and I immediately played it perfectly. The next day my dad bought me a guitar and a guitar book and my life started. Music is my everything and the language that I understand. William Shakespeare said, Music expresses that which cannot be said and on which it is impossible to be silent. You later formed the band Georgia with your two brothers Philip (better known as Ghapi) and Conrad Botha. What stands out from this era? What an experience to be able to perform in a family band. Georgia was probably one of the most popular bands in South Africa between 1989 and We were definitely at our best during this time. I started singing in Afrikaans for the first time during the Georgia era and it was unbelievable to be part of such an amazing band. Georgia and the band will always remain special. It provided a platform for each of us in our own unique way. Do you have any funny stories to share from your time as lead guitarist on popular KykNet show Dit is hoe dit is, met Steve? There are many. The day Steve conducted the interview with well-known nudist, Beau Brummel, we were all on stage literally naked with only our instruments it was hysterical and a once in a lifetime experience. We had a rock and roll show once where the challenge was to see how far we could throw television sets. Yes, it is crazy but hey, that is rock and roll for you. There are definitely plenty of stories to tell, however, what stands out is to have had the opportunity to work alongside the artists and team. People do not realise how much work goes into the production of such a television programme. I learned an incredible deal about recordings, television and people. How did your experience as lead vocalist of Georgia differ from your experience at Mean Mr Mustard? I brought my own sound to Mean Mr Mustard but I must add that for me the original lead vocalist, Mark Beling, will always stay synonymous with the band s sound. My time with the band was great and I had an incredible hit with the song Angel. Mean Mr Mustard was a stepping stone on the way to my new album. Both Georgia and Mean Mr Mustard were rock bands and the energy was unbelievable and very similar. Tell us more about your new album Kyk Op? I have been working on the album for two years - a project that lies very close to my heart. We are planning to release Kyk Op on 8 July. This time around the music is calmer. Music for the connoisseur. I brought in different styles and I think it brings a new sound to Afrikaans music. Maybe people are going to see a different side of me and not the rebel. My softer side definitely emerges on the new album. Do any of the songs on Kyk Op tell a personal story? The album is definitely about the difficult times in my life and what I had to go through to reach this point. I think the title of the album says a lot. I enjoy listening to Lotus FM where I got the inspiration to mix Afrikaans with Indian sounds. Another song that stands out is Lugballon the album is definitely about my story. When the instruments are packed away and the stage lights switched off, who is Andries Botha really? Andries is a normal family guy who enjoys spending time with his family. Quality time is scarce and I try to use every opportunity to spend with my child and my wife. I do not switch off from music easily because it is all around us and therefore I am forever tuned in to listen and create. If you did not earn a living through music, what other career would you pursue? Definitely a chef. I enjoy cooking and the creative process is similar to making music. Are there other music projects lined up in the near future? There are different projects lined up but at this stage I cannot give away too much. This is definitely my time. The next album is already in my head a 2014 production with fellow musicians and tours. Watch this space. Lastly, tell us something about yourself that not many people know. Not many people know that I am actually not from around here but from the Blou Planeet. 20 Get Crafting Shaping lives Arts and crafts shaped not only the life of Villieria s Louisa van Stade but also the lives of many underprivileged women. As Louisa van Stade welcomes me into her quaint home in Villieria, I am taken aback by the many beautiful artefacts that await me inside. At first glance her home looks like any other, but inside it unveils a story of a life lived with passion. Her own creativity and dedication to teach others to create, resulted in a platform to empower and uplift other women. While getting better acquainted the shy wife and mother gives me a tour of her home and many of the crafts she helped others to create. I quickly come to learn that even though this benevolent woman spends a lot of time on philanthropy, she is still an artist at heart. As we enter her crafts workshop she spontaneously smiles. She lights a burner, puts on her safety glasses and effortlessly melts a piece of glass while explaining, I was born to help those in need and craft is my medium to do just that. Born and raised in Pretoria, Louisa studied at Pretoria Technikon and Unisa. Soon after, she qualified as a goldsmith and her career began as a lecturer for the Jewellery Department at Pretoria Technikon. She later headed the Jewellery Department at Wits Technikon. My interest in South Africa s traditional designs was born while at Wits. As part of a research, design and technology team I travelled to many rural areas to discover lost techniques and traditions. I want to teach this to the youth again. With her growing passion and love for local designs the Minister of Mineral and Energy Affairs approached Louisa to start a countrywide rural jewellery development project, Kgabane, which helped to educate people across the country. As project manager of Kgabane I had the honour to see many parts of our beautiful country and learn and understand various cultures. I was also educated about the many women of our country, and the suffering they endure. During her years as project manager of Kgabane, Louisa learnt the value of the proverb of teaching someone how to fish. 21 Kgabane but still manages various upliftment projects across the country. Louisa assists women in particular with both the creation and marketing process. It is wonderful to work with women who did not have the opportunity to go to school or learn any skills due to their circumstances and background. These projects give them new hope and the chance to earn an income from what they can produce with their hands. Many of the projects Louisa is currently managing focus on recycling glass bottles into beads and many other discarded products into something new and beautiful. One of these projects in particular is the Alfa Sand development project in Rayton, just east of Pretoria, which assists women of the community in developing skills and creating striking artefacts that can be sold. The development project enables I was born to help those in need and craft is my medium to do just that disadvantaged women and children to care for themselves and their families by manufacturing jewels from glass, ceramics and metal. We also help them turn their homes into workstations so that they can continue to create and sell. Louisa recently opened a new shop in Dullstroom. APHRO*DITE proudly markets and sells the products created by the women and children she empowered. She dreams of opening more outlets in the future and setting up a marketing company that will sell and market locally produced crafts. 23 Maresa Richards Whenever I am on my bike with my helmet on, I feel free to shout, sing and talk as loud, and as much as I want and there is nobody to judge me. These are some of the therapeutic encounters Maresa experiences each time she jumps on her Harley Davidson Dyna Super Glyde. Maresa has been a bike enthusiast since 2009 after watching her girlfriends jump on their bikes at a motorcycle run, ready to take on the world. Her biker girlfriends enticed her then and there into the world of biking. Maresa, who is a proud member of the Pretoria branch of the Harley Owners Group (HOG), explains that when she is on her bike it is only her, her thoughts and the open road. The 52-year-old mother of three says driving her bike helped her to fully grieve the loss of her son seven years ago. She says it helped her cope with his untimely death and opened up a new world, full of experiences. Maresa confesses although she never would have thought of herself as being a biker one day, she now grabs every opportunity she gets to hop onto her trusty metal steed. 24 Get Riding Annatjie Jansen Annatjie Jansen explains that she was always curious about becoming a female motorcyclist, and when she finally decided to purchase a motorcycle almost a year ago, it was one of the best decisions she had ever made. This mother of two explains that when riding she experiences an almost spiritual connection with God and her family. My husband and I enjoy riding together, and when we do, it is quality time spent with each other and our Creator. Both of Annatjie s sons are very proud of their mother for adopting such a cool hobby and they both describe her as being a gracious rider. She says that her new Harley Davidson Softail Deluxe is the perfect motorcycle for a woman due to its almost feminine look. Annatjie is also part of HOG and says that it is the perfect way to meet people she would never have met before. There are various HOG branches, not only in South Africa but all around Annemarie Wheeler Energetic wife and mother, Annemarie, has been enjoying the thrills of being a motorcyclist for four years. She describes her hobby as something that is exhilarating, challenging and an activity that keeps her mind young. Nothing eases the mind as well as a day out on your bike. You get to really smell the roses, meaning you are out in the open, you feel the sun and you smell the rain. You just feel so free when riding. Annemarie, who is also a successful business owner, says her son, who is also a motorcycling enthusiast, was her gateway to finally experience the thrills herself. She adds that she enjoys the social aspects of being a biker. Annemarie gets a kick out of driving with others, breakfast runs and participating in various charity initiatives. She quirkily announces that she also enjoys personalising her motorbike to suit her personality and that the pretty design always attracts plenty of attention. Annemarie says that even though she recommends this hobby to any women seeking adventure, she would still advise them to always follow the right steps and the world. This gives us the opportunity to join any of these chapters on any of their functions or rides. Season to taste while frying. * Add sufficient water to cover the meat, and a bit of red wine or port if you prefer, and let the meat simmer on a lower heat setting for about an hour or until the meat is soft and tender. * Add the potatoes, carrots and mealies and let simmer with a closed lid for another hour or until nearly tender before adding the mushrooms, green beans and patti pans. * Season to taste and let simmer until it is cooked to your family s specifications. * Serve with rice and enjoy. 39 Choc-o-heaven For a bit of heaven on earth, indulge in wickedly delightful, dark chocolate. Chef JB Bekker, author of yummy recipe-book, Decadent desserts, shares some of his favourite tastebud-tickling chocolate recipes. According to this masterful chef from Faerie Glen, dark chocolate is a versatile ingredient that can work beautifully in both savoury and sweet dishes. Chocolate Chilli Mousse Ingredients: ¾ cup chilled heavy cream 4 large egg yolks ¼ cup Amarula cream 3 tablespoons sugar Pinch of salt Chopped fresh chillies 200g dark chocolate 2 large egg whites Method: Beat half a cup of cream until stiff, cover and let chill. Beat the yolks while adding sugar in small amounts until pale and fluffy. Melt the chocolate and add to eggs while whisking briskly in order to prevent the eggs from curdling. Add Amarula cream and mix well. Cool mixture slightly and fold in the whipped cream. Whisk egg whites and salt to stiff peaks and fold into chocolate cream mixture. Divide the chocolate mousse into individual glasses and chill in the refrigerator until firm. Serve with a chilli garnish for some colour. Cumin promotes a smokey undertone while Coriander enhances the earthy note to the chocolate mousse. Sprinkle Dukkah over the mousse just before serving for a mystic touch to the dessert. Dukkah is an Egyptian spice mixture consisting of chopped nuts, seeds and Middle Eastern spices. Dukkah is traditionally eaten by dipping bread into olive oil and then into the Egyptian spice. Alternative dessert ideas with chocolate chilli mousse: Use pastry cases and fill with Ganache and top with Chocolate mousse. Garnish with freshly chopped chillies, Dukkah or sliced fresh fruit. Another mouthwatering idea is to jazz up classic custard slices with chocolate chilli mousse. Tips: Mousse can be made a day in advance. Leave the mousse for ten minutes at room temperature before serving. Use a few drops of Stevia or the same amount of Xylitol for a guilt free version. Add a pinch of ground Cumin, Cayenne pepper or Coriander to your mousse when folding the egg whites. June 13 Get It Pretoria 39

Fool-proof Chocolate Fondant Ingredients: Melted butter, for greasing Cacao powder, for dusting 275g dark chocolate (that contains at least 70% cacao solids) 225g unsalted butter 400g castor sugar 0.5tsp vanilla extract 5 large free-range eggs, beaten 200g plain flour, sifted 8 ramekins Method: Pre-heat the oven to 180 C, brush the pudding moulds sparingly with melted butter, dust with cocao powder and shake out the excess. Set aside. Slowly melt the chocolate and butter in a saucepan. Remove from the heat and stir in the sugar and vanilla extract. Leave to cool down slightly. Whisk the eggs into the mixture a little at a time, before folding in the sifted flour and a pinch of salt until you have a smooth mixture. Divide the mixture between the individual moulds each mould should be two-thirds full. Place on the middle shelf of the oven and cook for 12 minutes exactly. Remove from the oven, run a knife round the edges, invert and tip out on to serving plates. Serve immediately with vanilla ice cream and fresh seasonal berries. Tips: When whisking eggs into the chocolate mixture, remember to whisk briskly and to pour the egg mixture in slowly in order to prevent curdling. To use this recipe for cupcakes, pour the mixture in a cupcake pan and follow the normal instructions. Decorate cupcakes with chocolate mousse or whipped fresh cream and serve once chilled. 41 Enchanted Mushroom and Chocolate Soup Ingredients: 2 cups of Portobello mushrooms ½ cup minced onions 1 tbsp minced garlic ½ tsp salt 4 tbsp olive oil ½ cup dry white wine 2 cups vegetable stock 6 tbsp dark chocolate (70% chocolate content) Method: Add olive oil to a small saucepan and sauté mushrooms, onions and garlic. De-glaze with white wine. Add to a food processor and puree. Pour the mixture back in the saucepan and add water and chocolate. Cook until reduced by one fourth. Garnish with fresh cream and croutons and enjoy. Tips: For a slightly different taste, replace the vegetable stock with a curry-based or beef stock. The soup can be made a day in advance and reheated just before serving.

43 This delightful three-course salt and wine dinner party, in association with the Department of Consumer Science at the University of Pretoria and Fleur du Cap wines, was the perfect playground for Chef Craig s appetising salt and wine combinations. The exotic menu featured salted pork belly, pickled cucumber and pickled vegetables paired with Fleur du Cap Merlot, roasted chicken baked in Khoisan salt, paired with Fleur du Cap Chardonnay, and Pot ash cake, spicy syrup and vanilla ice cream paired with Fleur du Cap Noble Late Harvest. According to Craig, who boasts with a collection of more than 100 salts from all over the world, salt is about much more than just sprinkling it over our food. This salt guru is truly passionate about enhancing salt dishes with the perfect wines and shares his insight into the wonderful journey of salt and wine pairing with us. Craig, you are passionate about sourcing and experimenting with different types of salts and boast an impressive collection of rare salts from around the globe. Where does your love for food and salt pairing come from? It all started 5 years ago with a food demo. People asked me all sorts of questions, which I could not even answer at that stage. I started reading up on salts and became more interested in the subject; today I have a collection of more than 100 salts from all over the world. Fleur du Cap wines lend themselves perfectly to the salts. I host many Fleur du Cap salt dinners at Die Bergkelder in Stellenbosch. We pair the wines with various dishes with some of the recipes dating back to 2000 years as salt was mostly used as a preservative in those days. I have also started a salt brand, Amoleh, which consists of three local and five foreign salts. What should we keep in mind when pairing wine with different types of food? The most important thing is that wine and food should bring out the best in each other. It helps when one has knowledge of wines. However, people do not need to be nervous about wine and food pairing. It is actually a simple four-step process. At the salt dinners we explain the pairing process with our dinner guests. First, look at the colour of the wine, twirl it around in your glass. Smell and taste the wine. Then taste all the components of your plate with your fork. Taste the wine again - if the wine tastes even better, you have hit a winning combination. Basically, if the wine smells and tastes the same before and after your first bite, you are on the right track. Your salt and wine menu, featuring salted pork belly and syrupy pot ash cake was mouth-watering. Why did you choose to pair these combinations specifically? You have to take into account the weight and mouth feel of the wine in balance of the food. It also depends on the saltiness of the dish and how it works with the wine. We normally make a dish that we feel should work with the wine and then we do the tasting; if it works, it is a match. If not, we need to look at another dish until we get a match - you should never force a match. What should we look for in a good wine? Christoff de Wet, assistant red winemaker at Fleur du Cap: A good wine for me is a wine that complements the occasion. On its own, it must be fresh, clean and to the point. If it is a wine to be enjoyed with food, it must mirror the dish. Big and bold if the dish is big and bold. Delicate if the dish is delicate. As the saying goes, horses for courses. Pot ash honey cake with spicy syrup and vanilla ice cream Fleur du Cap Noble Late Harvest is a marvellous companion to this dessert with its suttle spicyness Cake Ingredients 250g honey, 250g cake flour, 50g sugar, 50ml milk, 20g baking powder, 3 eggs Method Preheat the oven to 180 C. Heat the honey, milk and sugar in a pot until the honey has melted and allow cooling until it reaches room temperature. Sieve the flour and baking powder together. First whisk the eggs and then the flour into the cooled honey mixture. Pour into greased muffin moulds (18-24) and bake for minutes. Syrup Ingredients 200g sugar, 200ml water, 2 cinnamon sticks, 4 oranges, halved and squeezed Method Place all the ingredients in a pot bring to a boil. Dit was ons eerste reis saam oorsee en die land bied n reuse verskeidenheid van landskappe en stede. Daar is soveel om te doen. Raymond: Argentinië. As jy hou van vleis, wynroetes op fietse, tango, gletsers uitklim en mooi meisies wat Spaans praat, dan sal jy verstaan dat Argentinië enigiemand se hart sal steel. Die watervalle, reënwoude en karoo-agtige landskappe is asemrowend. Watter land het julle die meeste verras? C: Vietnam. Die kultuur, verkeer en kos was skokkend. R: Costa Rica. Dit is baie duur in vergelyking met ander lande in Sentraal- Amerika, maar die natuurskoon het my asem weggeslaan. Daar is n oordosis berge, woude, vulkane, voëls en interessante diere.
