LISTEN DARK SKY ISLAND Irish musician Enya has just released her eighth album, featuring 11 original tracks, almost eight years after the concept album, And Winter Came... In her career, spanning three decades, Enya has sold over 75 million albums worldwide and has won four Grammy Awards. Dark Sky Island is a collection that s both incredibly diverse and innately unified by the production: almost Spector-esque in its lavish, wide-screen multi-tracked layers of sound. Enya performs all the vocals and instruments on the album, apart from Eddie Lee who plays the double bass on Even in the Shadows. The album s title was inspired by the designation of the island of Sark as the world s first dark sky island and a series of poetry books on islands from Roma Ryan. WATCH THE INTERN Termed a modern generation-gap comedy, this film by Nancy Meyers, who brought us The Parent Trap, Something s Gotta Give, The Holiday, and It s Complicated, is bright and breezy, light and not serious, but it does get in a bit of a dig at the Hollywood sausage factory. The Intern tells the story of recently retired, but bored 70-year-old widower, Ben Whittaker (Robert De Niro), who seizes the opportunity to become a senior intern at an online fashion site in Brooklyn. Once he s assigned to the boss and founder of the company, Jules Ostin (Anne Hathaway), his inexhaustible patience with her mild Type-A personality makes them an unbeatable team as she weathers the bumps of expanding her company and balancing work and her personal life. Ben quickly discovers that starting a new job can be a difficult challenge, especially if technology has left you behind. With his old world charm, wisdom and sense of humour, Ben soon becomes popular with his younger co-workers, including Jules, with whom he develops a special bond and growing friendship. Swiss-precision in the kitchen Since opening its doors with just seven rooms way back in 1994, the acclaimed and multi-award-winning five-star boutique De Hoek Country Hotel in the small hamlet of Magaliesburg has made a name for itself for excellent service and superb cuisine. Swiss-born and trained managing director, co-owner and Chaine des Rotisseurs chef Michael Holenstein is a major part of the success of this hotel with its two restaurants in the foothills of the Magaliesberg. Little wonder that his favourite food quote from Virginia Woolf is: One cannot think well, love well, sleep well, if one has not dined well. When did you come to South Africa? My father was offered a position at a Swiss company operating in South Africa in 1964 when I was just four months old. My home language is Swiss German, but I am fluent in English and Afrikaans and matriculated from Randfontein High School. South Africa is an amazing country, with heaps of potential. The people are incredible. Did you always want to become a chef? I have always been a stickler for great customer service and wanted to manage my own business. I honed my skills in the hospitality industry, first in the demanding five-star kitchen environment and then in the tough catering industry. Where did you receive your chef s training? After I matriculated in South Africa, I did a three-year chef apprenticeship in 1981 through the Hotel Uzwil in St Gallen, Switzerland. I graduated with a Swiss National Certificate in Professional Cookery and as an executive chef. What did you do prior to coming to De Hoek? My first position was as junior sous chef at Chapters in the Sandton Sun, where I served for two years. In 1989 I was offered a position as production director for a product development company, where I also spent two years before entering into a partnership in a catering company. I then sold my part of the business to open up my own restaurant, Papa Gigi Trattoria in Windsor. It was hard work, but very rewarding. When the opportunity came along to partner in De Hoek, I took the plunge and have been here since. What is your food philosophy? Most important is fresh, local, and artisanal food, in classic French style with a modern touch. Chefs that inspire me are Paul Bocuse, Eugen Pauli, and Anton Mosimann. South Africans have made huge strides in culinary appreciation and eating well What three ingredients do you always have in your kitchen? Rump, rocket, salt flakes. What are the three utensils you cannot do without? A black frying pan, my pasta machine, and VICTORINOX long-prong fork. How has food appreciation and cuisine changed in South Africa over the years? strides in culinary appreciation and eating well. However, the majority of the population still very much favour the franchise restaurants that overpopulate the malls and shopping centres. What is an award-winning chef s comfort food? I really enjoy a good steak with fresh salad, a good piece of fresh fish, homemade pasta or Gorgonzola, onion, and Tabasco pizza! How do you unwind from the stresses of running a business? I take my four Cocker Spaniels for a run or walk around our property to clear my head. Family time is also very important. I am a keen bird-watcher and hiker. Through these hobbies I also get to do my other favourite hobby, photography. A To tattoo or not to tattoo, that is the question. And the answer? Make sure you do it for the right reasons and you can live with it, says tattoo artist Candice Simmons. Meeting the petite painted lady, it is clear that her tattooed skin is a reflection of a very colourful personality. And that is what tattoos are all about, she believes. An expression of yourself. Why tattoos? Look at the world, how colourful it is. The leopard has spots, butterflies have all these beautiful colours, and we come into the world with this pale skin, she gestures. We are a clean canvas and tattooing is a beautiful art form that lets people express themselves for ever... How did you become a tattoo artist? It was all my husband s fault. He was an excellent tattoo artist and it was so beautiful to watch how things came to life while he was working. So I decided I also want to be able to do that. When did you get your first tattoo? I was 18 and walked past a tattoo shop and on impulse went in and had an ant tattooed on my ankle. I never thought at the time that one day I would be covered in tattoos! Why do people get tattoos? Usually it is for deeper reasons, especially after a life-altering experience or emotional trauma. A tattoo marks the person s journey through life. Experiences make us grow and we reflect these on our bodies to remember where we have been. What happens to a bad tattoo? Ah, I get loads of those done by backyard tattooists that I have to cover up. You can cover it up with something more beautiful and meaningful. I do a lot of repair work. And if one of your clients come back unhappy? I have never had one. The reason is that I talk to them first. I advise and If I think they do it for the wrong reasons I will try and discourage them. I d rather lose a customer than do something I know they are going to hate later on. What kind of tattoos do you not like doing? Names of partners! It is unlucky and then when the couple breaks up... I get to cover quite a bit of exes names. And then you get the people who waste a lot of skin by saying too much. Use one word that says it all. I try to discourage them but if they insist, and it makes them happy, I will do it. How do you advise them? I am an undercover therapist! I have to know why a tattoo is picked. People are often surprised at how direct I am. I don t edit what I say, I am straightforward. But I pay attention to what people want. It is about making them happy and having smiles on their faces when they leave the shop. What is the funniest tattoo you have done? The weirdest one was definitely a monkey on someone s stomach bending over and looking at you from between his legs with the person s belly button as a very strategic point... And the most difficult? Definitely portraits, because there is no room for error. And some cover-ups are also a huge challenge. Is there still a stigma to tattoos? Oh yes, not as much as before, but it is still there. I have been called horrible names. One day a real Farmer Brown and his friends pushed me around in a shopping mall and called me vieslik. People don t even try and disguise what they think about you. But it does not bother me. I think many of these people wish they had the guts to express themselves on their skin. How much does it hurt? It depends from person to person. Some have a higher pain threshold than others. The average session lasts between three to four hours. The longest I have endured was six-anda-half hours, but by then I wanted to punch the tattoo artist. And we do break every now and then. I also find that people who have had an emotional upheaval and hurt inside, don t find the tattooing to be so painful. Are your two teenage daughters allowed to get tattoos? When they are eighteen. Their dad died two years ago and if they want something to remember him by, it is okay as long as it is discreet and covered up. How do they feel about your tattoos? My one daughter did not trust people without tattoos when she was small. She used to ask where their pictures were. Then they both went through a stage where they did not want me to stand out, and now that has changed again... Vanjaar se Mev Rustenburg, Nannette Robinson, is n vrou met n hart vir haar dorp. Sy beplan om die meeste van haar jaar te maak tot voordeel van die gemeenskap. Nannette met haar twee Williams Al is Nannette (29) n groentjie op die gebied van skoonheidskompetisies, het die Mev Rustenburg 2015/2016-kroon nie net met haar eerste probeerslag op haar kop beland nie, maar sy het ook dié kompetise se Mev Fotogenies-titel gebuit. Ek is eintlik skaam en teruggetrokke. My selfbeeld het eers begin verbeter toe ek skoonheidskunde begin studeer. Omdat ons met mense werk, moes ek maar my skaamheid in my sak steek en ek dink regtig dit het gehelp om my te bring waar ek is, vertel Nannette wat in Rustenburg grootgeword, maar aan die Hoërskool Koster gematrikuleer het. Van die titelhouer se pligte sluit in die aanbied van liefdadigheidsfunksies en optredes by geleenthede om die dorp te bemark. Ek is werklik n nuwe mens met n nuwe uitkyk op die lewe na die kompetisie. My verhouding met my Hemelse Vader het verdiep en ek word ekstra krag en leiding gegee om elke dag n verskil te maak. Ek sal dit môre weer doen. Die mense wat jy ontmoet en die vriendinne wat jy maak in die proses is net wonderlik. Ek geniet die liefdadigheidsaspek ook vreeslik baie. Dis n geleentheid om verhoudings te bou met my gemeenskap en ek het al so baie van myself in die proses geleer. Ek besef net daagliks hoe bevoorreg ons is en hoe dankbaar ons moet wees. Ons mag regtig nie kla nie, want daar is soveel mense daar buite wat nie het wat ons het nie. vertel Nannette, wat na vyf jaar as skoonheidsterapeut die korporatiewe wêreld betree het as kosmetiekbestuurder by n groot apteekgroep. Hy is baie besig, maar hy hou ons jonk! lag Nannette. Die Robinsins is baie lief vir draf en probeer minstens so twee keer per maand aan n wedloop deelneem. Dis ons alleentyd en ons is mal daaroor om die buitelewe te geniet. Boeta is nog bietjie klein, maar sodra hy groter is, kan hy saam met ons die passie uitleef. Ons hou van oefening, want dit gee n mens energie. Ons is baie gesondheidsbewus en wil graag n goeie voorbeeld vir ons seuntjie wees. Ek speel ook netbal. Dis die een aand in die week wat dit net my tyd is om bietjie te ontspan. EASY EASTER SUGAR COOKIES IngredIents: ½ cup butter, softened ½ cup margarine, softened ¼ cup sour cream 2 eggs 1¼ cup sugar 1 teaspoon baking powder 1 teaspoon baking soda ½ teaspoon salt 1 teaspoon vanilla ¼ cup milk 4 cups flour Icing: ½ cup butter, softened ¼ cup milk 2 teaspoons vanilla 4 cups powdered sugar (more or less depending on how thick/runny you like it) Food coloring, optional Other toppings for cookies: Large marshmallows pink sugar crystals or sparkles jellybeans chocolate chips InstructIons Preheat oven to 190 degrees Celsius. In a bowl, cream butter, margarine, and sour cream together. Add eggs and sugar and mix well. Add baking powder, baking soda, salt, vanilla and milk and mix well. Add flour and mix again. Roll out dough to about 1/2 cm thick and using a circle cookie cutter, cut as many shapes as you can. Place cookies on an ungreased cookie sheet and bake for 6 to 8 minutes (you do not want to overbake these cookies - if the cookies turn a golden colour, you have cooked them for too long). Remove cookies from cookie sheet and let cool on a wire rack. While cookies are cooling, combine all icing ingredients in a large bowl. To make a bunny cookie, cover cookie with white icing. Take one large marshmallow and cut it in half on an angle. Dip each half (the stick side) into the pink sparkles to make bunny ears. HOT CROSS BUNS IngredIents: 300 ml whole milk 500 g strong white flour 75 g caster sugar 1 tsp salt 7 g sachet fast-action yeast 50 g butter 1 free-range egg, beaten 150 g sultanas 80 g mixed peel 1 apple, cored and chopped 2 oranges, zest only 2 tsp ground cinnamon sunflower oil, for greasing the bowl For the cross 75 g plain flour, plus extra for dusting For the glaze 3 tbsp apricot jam InstructIons Bring the milk to the boil and then remove from the heat and leave to cool until it reaches hand temperature. Mix the flour, sugar, salt, yeast, butter and egg together in a bowl, then slowly add the warmed milk until it forms a soft, sticky dough. Add the sultanas, mixed peel, chopped apple, orange zest and cinnamon, then tip out of the bowl onto a lightly floured surface. Knead the dough by holding the dough with one hand and stretching it with the heal of the other hand, then folding it back on itself. Repeat for five minutes, or until smooth and elastic. Put the dough in a lightly oiled bowl, cover with oiled cling film and leave to rise for approximately one hour, or until doubled in size. Divide the dough into 12 even pieces, and roll each piece into a smooth ball on a lightly floured surface. Arrange the buns on a baking tray lined with parchment, leaving enough space so that the buns just touch when they rise and expand. Set aside to prove for another hour. Heat the oven to 220 degrees C. For the cross, mix the flour with about five tablespoons of water in small bowl, adding the water one tablespoon at a time, so that you add just enough for a thick paste. Spoon into a piping bag with a small nozzle. Pipe a line along each row of buns, then repeat in the other direction to create crosses. Bake for 20 to 25 minutes on the middle shelf of the oven, or until golden-brown. Gently heat the apricot jam to melt, then sieve to get rid of any chunks. While the jam is still warm, brush over the top of the warm buns and leave to cool. Gently rip the buns apart to serve, revealing temptingly soft edges. (Recipe www.bbc.co.uk/food/ recipes) CHOCOLATE DIPPED STRAWBERRY EASTER EGGS IngredIents: 1 1/2 cups milk chocolate chips 1 tablespoon vegetable oil 1 cup icing (use different colours) directions: Wash and dry each of the berries and remove any green stem or leaves. Line a cookie sheet with parchment paper. Melt the chocolate chips in the microwave until mostly melted. Then stir in the vegetable oil until well blended and smooth. Dip each strawberry top first into the melted chocolate covering 2/3 of the berry. Use your fingers, or spear it with a fork and dip it in that way. Lay them on the parchment paper. Dip all of the strawberries and put them in the refrigerator for about 30 minutes until the chocolate hardens. Then pull them out and let the decorating begin. Makes about 18 strawberries (Recipe from www.sixsistersstuff.com) You could also make butter cream icing and colour it. Divide it into bowls and colour each bowl of icing a different colour. This is the question that inspired South Africa s newest motoring show, Speed Stars. It s been likened to the hugely popular Top Gear, but the man behind the magic, show creator and presenter Marius Roberts, says there are a few twists to his take on good motoring TV. I wanted to combine my passion for motoring and television and somehow create a show that was both entertaining and exciting to watch, yet still drove home an important road safety message. And that s how he came up with the concept to take everything we know we aren t supposed to do on the road... and do it! We don t put our celebs in a dull and slow everyday car like Top Gear s Star in a Reasonably Priced Car. We unleash them in the Opel Astra OPC a high performance superhot hatch! The stars are then pitted against each other to fight to the finish for a top spot in the finals, but it s not just about who can go fastest. The celebs must first undergo a series of challenges to prepare them for that single oh-so-important lap. 4 Herbs to grow in the kitchen Nothing brings satisfaction to home cooking like using freshly picked herbs from your own homegrown garden. The master chefs of the world all recommend using fresh herbs instead of dry ones, so let s see what four kitchen herbs are best and easiest to grow right indoors. Place the herbs on a windowsill where they will get lots of sun. And you will love the fragrance as well! BASIL Available in different variations, basil is worth growing for its aromatic smell alone. You can easily grow it from seed form, or get ahead of the game by buying it already started at your local grocery or nursery store. They are typically used in salads, pasta sauces and other salsa-based sauces. A container with plenty of drainage holes and room for expansion as it grows is best. Generally doing best in bright sunlight, the soil should be kept moist, well drained, but not soggy. Usually, the time for germination from seed form is 5 to 10 days and it ll be another 10 days before it s ready to harvest. An excellent source of vitamin K, manganese, copper, vitamin C, calcium, iron, folate and omega-3 fatty acids, it also has medicinal anti-inflammatory properties. CHIVES Coming from the Allium family of garlic, onion and shallots, chives are the thinnest, grass-like variation of the Allium. Being high in sulphur makes this plant a great antibiotic, cancer-fighting agent and potent insect repellent as well. Making a fantastic addition to fish, soups and veggie dishes in general, chives have an onion-like pungent flavour. However, they are less overpowering than their onion/garlic cousins. At the end of the season, preserve them by drying or pickling them and then adding to olive oil, butter and/or vinegar. Try growing indoors in halfsunlight and then transplanting outdoors in the spring or fall. Germination from their seed form is typically 7 to 14 days in part shade and bright sunlight afterward. Soil should be rich, moist and well-drained. DILL Adding an almost sweet and tangy flavour to cucumbers, fish dishes and salad dressings, dill is more closely associated with Scandinavian/German cuisines. The dill s oils qualify it as being a chemoprotective food, or a carcinogenic neutraliser. It s also known as an antibacterial spice and aids in deterring bone loss. Because dill grows up to 90 cm tall, it is best left for outdoor planting in full sunlight. Usually, germinating seeds sprout in approximately 7 to10 day. CORIANDER Typically found in both the East Indies and the West Indies, this powerful smelling herb is also known as broad-leaf cilantro with a unique variation in appearances. Excellent for seasoning meats, salsas and Caribbean dishes, a spicy flavour is the result of using this herb. High in vitamin C, the herb also aids digestion and relieves gastric upsets. Known as having a favourable impact on one s blood sugar, it also aids in reducing the stress levels of both the liver and the pancreas. Best grown outdoors in full sun during the spring and summer, coriander seeds are what you ll be watching for as they turn black a sure indication that it s planting time. The hardy cilantro leaves generally grow up to 12 inches long; however, watch out for the sharp, tiny spines found in broad-leaf cilantro leaves. Typically, germination from seeds occurs from 7 to10 days after planting with a harvest occurring from 3 to 4 weeks afterward.
