Kombuis is something of an icon among certain South Africans who consider him the guru of Afrikaans rock music and father of non-conformist Afrikaans culture. With influences from Bob Dylan, Neil Young as well as ex-beatles George Harrison and John Lennon, Koos musical style is raw. He is considered by many as one of South African music s best lyricists. Running pretty Juggling pharmaceutical studies and a professional athletics career is not a piece of cake, but promising athlete Ariane Nel from Hartbeespoort firmly believes there is enough time for everything... you just have to put in the extra hours. For most 21-year-olds life is about discovering life, socialising, partying and even some studying in between... but for athlete Ariane Nel, there are only two goals finishing her studies and qualifying for the coming Olympics. Only then will there be time for the things other young people take for granted. Ariane recently returned from the athletics world championships in London where she represented South Africa in the 4x400m relay team. For this pretty petite blonde, who looks more like a model than an athlete, running is as part of her life as breathing. I have two priorities athletics and studying, unfortunately in that order, she laughs. I know other students look a bit askance at me. I have supper with my few close friends on Mondays, but the rest of the time I am on the track or in front of the books. Running is my one great passion and I only have a few years to make my dream of competing in the Olympics come true. Her recent participation in the world championships, has just fuelled her determination. It was such an experience... suddenly there I was eating with Usain Bolt, one of my biggest heroes! Just to be in the presence of these people I have looked up to all my life, has motivated me even more. I think one does not know what you dream about until you have seen it, and now I have. Running is my one great passion Her schedule is gruelling. I work about 12 hours a day on studies and athletics. After classes I train and then it is back to the books, six days a week. When there are meets in other towns, I get up at 03:00 to catch a plane and when I return, it is all-nighters to catch up lectures I had missed. B-Pharm is not an easy course, but my dad taught me that one can make time for everything. and I only have a few years to make my dream of competing in the Olympics come true. She finishes her studies next year and plans to then concentrate mainly on her athletics career. The average athlete retires around 28. So, I have to hurry and catch that dream. For other hobbies and interests there is no time. I am not a very sociable person. I have a few close friends but I like my own company. That is why I like athletics so much. I cannot blame anyone else when things go wrong and I get the glory when I win, she laughs. She is positive about her chances to be included in the Olympic team. South African athletics is growing and our athletes are making their international mark. It inspires me. I have the same opportunities as they have, so I have no excuse not to achieve my goal. Her parents are her biggest supporters. They taught me that I can do anything with hard work. My dad always says there is time for everything you want to do, you just have to be prepared to work harder. And it is true. Touria cooks Moroccan I love Moroccan food because it reminds me of home.when I cook I put all my emotions and love into the food. These are the words of Touria Vally, wife, mother and cook extraordinaire from Brits. Born and raised in Casablanca, Morocco, Touria is a well-known face at popular food markets these days. Her Moroccan cuisine is filled with subtle spices and intriguing flavour combinations. Think tart green olives paired with chopped preserved lemon rind stirred into a tagine of tender chicken, sweet prunes and toasted sesame seeds in a spicy lamb tagine or sardines coated with a flavourful combination of coriander, parsley, cumin and a hint of chilli. Influenced by Andalusian Spain, Arabia and France, Morocco s cuisine is a delicious combination of mouth-watering flavours that makes it unique. Her mother taught her how to cook at the early age of 13. We always had visitors at our house and when my mother was not home, I had to cook for my family and for the guests. Her marriage was an arranged I started cooking for the community over weekends and eventually people started to order meals from me. marriage. Her sister, who stays in South Africa, knew Hoosein s family. The Vally family visited Morroco and there was an initial meeting in a family gathering. Touria and Hoosein got married and relocated to Brits 17 years ago. Adjusting to life in South Africa was not easy. I cried a lot because I missed my home and my family. I could hardly speak a word of English and even though I had diplomas in accounting and computer programming, and could speak Arabic and French fluently, I could not work because of this. I watched television and read books and my husband helped me to learn English. She got involved in her community and this is how her cooking career started. I started cooking for the community over weekends and eventually people started to order meals from me. Her cooking business took off and today Touria and her family are wellknown faces at popular food markets. It is a family affair. All of us work together to make it a success. Her first market was at the Mount Cambridge School in 2014. The Vallys are also familiar faces at the annual Hartiwood food and film festivals. Over weekends they attend numerous markets in the Pretoria area where their food is in high demand. They cater for weddings and other functions and also bake biscuits and cookies for weddings. With her husband being Indian, Touria has a love for Indian food as well. I like to cook Moroccan and Indian food, and a fusion between the two. Moroccan food with the flavours of India mixed in. She uses her own experience, reads cook books and watches cooking channels to find inspiration for new dishes. Her family s favourite dishes? All of them like different dishes. Preserved lemons and marinated olives, vegetable couscous and meat couscous, homemade pita bread they like them all! What makes her food so special? I prepare all my food from scratch with fresh ingredients. My business grows through word of mouth. People like to try new things. And my food is good, so they tell everyone else. She says that people are always surprised to hear that it snows in Morocco in December. Morocco is a place of opposites. On the one side you have the mountains with a climate much like Cape Town. On the other side you have the desert, which is dry and hot. She always brings back spices and Argan oil to South Africa to sell at markets. As a mother of three girls, aged 15, 12 and 8, Touria is quite busy during the week with sport and other activities that the girls need to get to. She is teaching her eldest to cook, with the two younger daughters helping out in the kitchen as well. Her family are the most important people in her life. It is difficult to live so far away from one s parents. My mother passed away just a month after I visited her this year. You are not there for them when they need you. When asking her what advice she would give her daughters if they ever wanted to start a cooking business, Touria had the following to say: Cooking is hard work. Do not try and do everything on your own. Teach other people to help you. Your studies are the most important, though. To design and make two spectacular wedding rings in as many days, is not something that your average jeweller is able to pull off easily. Lezanne van der Merwe, talented manufacturing jeweller from De Wildt, was recently featured on Kom ons trou nou, a reality television programme on the Via-channel on DSTV. In this program brides-to-be plan a surprise wedding for their unsuspecting significant others. It was such an experience to design and manufacture wedding rings for the programme. So much pressure, but so much fun. She says that given the chance she would definitely participate in something like this again. A program like this exposes you to a whole new customer base and it forces you out of your comfort zone. Vintage Mila, situated in Lynwood, Pretoria, focuses on handmade, one-of-a-kind jewellery. I used to run my business from home but after a burglary where most of my stock was stolen, I decided that it would be safer to relocate the business. She shares the space in Lynwood House with two fellow jewellers, Johnny and Gillian, who are not only wonderful teachers but also dear friends. This gives me the freedom and time I need to be there for my children. The family still resides in De Wild and Lezanne travels to Pretoria to run her business. I will never be able to stay in a city, I love having space and tranquillity around me. She always knew that she wanted to design and manufacture unique jewellery. I started playing around with clay in high school, designing and making jewellery. After matric she completed a four year course in jewellery design and manufacturing and did her apprenticeship at a well known jewellery Making jewellery is all that I have always wanted to do. I cannot imagine doing anything else. wholesaler, mass manufacturing pieces for retail. I sold my own creations at markets, saving up enough money to buy tools. For her 21st birthday, her father bought her first workbench for her, which she still works on today. My dad has always encouraged me, I definitely inherited my arty side from him. Lezanne believes that her personal touch and service set her apart from other jewellers. I like to work oneon-one with my customers, getting to know them and bringing their vision to life. Whenever I work on a piece I feel proud, also a bit nervous because I want the client to get exactly what they envisioned. My business grows through word of mouth so my end product is extremely important. I want the customers to love and treasure their pieces. I have had customers from as far as Seychelles and Dubai. The strangest piece she has ever had to manufacture was for an old lady who wanted all her grandchildren s baby teeth set in a pendant, so that she could always have them close to her heart. I set the teeth in a gold and silver pendant. She was extremely happy with her piece. Her favourite piece that she created? Definitely my first wedding ring. I have had about six wedding rings and I regularly melt them down to create something else, but this ring is still in its original form and still my favourite. Even though some people would say that the market for jewellery is quiet because of the economy, Lezanne believes that you just have to be clever about how you do business. My jewellery is affordable. I like to work with silver, because it is durable and not that expensive. I can also keep my costs down, because I do not have high overheads. In her free time, she loves to play drums and dance and play with her three children, two boys and a girl. With family like mine who support me like they do and God s everpresent love, anything is possible. I am extremely blessed to get to live this life every day! So many people are stuck in jobs they do not enjoy, so if you get the chance to do what you love, take it. Go for what you want. The right doors will open at the right time. Spicy and sweet, fennel is a cook s dream and a delight for gardeners who love its striking foliage and flowers. fennel Flavourful in As a herb, fennel (Foeniculum vulgare) is a citizen of the world, like so many other Mediterranean exports. It still grows wild along the coast and on dry sunny Mediterranean slopes, but from there it has spread throughout the world because it has such simple requirements: plenty of sun and ordinary garden soil. Bronze fennel (Foeniculum vulgare Rubrum Purpureum ), in particular, is a beautiful foliage plant (with all the herbal uses) that is more often found in flower gardens, especially mixed borders where it is used as a tall, striking foliage plant. In addition to its good looks, fennel has many culinary and healing properties. The leaves and seeds are strongly aromatic, adding a subtle aniseed flavour to fish, poultry and vegetable, as well as spicy Indian and Italian dishes. The bulb of Florence fennel (Foeniculum vulgare var. dulce) has a milder taste. The seeds and leaves of fennel are indispensable as part of the home pharmacy, soothing red eyes, alleviating indigestion and colic in infants, reducing nausea, acting as a mild laxative and even helping new mothers to produce milk. GROWING FENNEL Ordinary fennel and bronze fennel grow up to 2m high, with fine, feathery green or bronze leaves and umbels of yellow flowers the size of dinner plates. Their preference for sandy soil suits coastal gardens, but they grow easily just about everywhere. Plants heavier soil may die in very wet or cold winters. Both plants are perennials and can be cut back when the leaves start to fade. They will shoot up again. Florence fennel requires richer soil, which should still drain well, and more regular watering to ensure swollen bulbs, which are shaved into salads or roasted. For this reason it is usually grown as an annual. GOOD COMPANY Butterflies and beneficial predator insects like hoverflies and wasps love fennel s yellow flowers. The flowers also act as a trap, attracting aphids away from other plants. Because dill and fennel are so botanically close, they tend to cross-pollinate and the result is not very satisfactory. HARVESTING SEEDS At least one plant should be allowed to go to seed so that the umbel ripens and turns brown. When this has happened, cut off the flower head, dry it in a cool place and after 2-3 weeks shake the dried seeds into a brown paper packet or a container with a lid. GOOD NEWS FOR DIETERS A tea made from crushed fennel seeds or leaves acts as a mild appetite suppressant as well as a diuretic. Both help to lose weight naturally. A quick and easy tea can be made by placing 3-4 teaspoons of fresh leaves in a teapot and adding boiling water. Let it steep for five minutes and pour a refreshing, delicious cup of tea. Drink three times a day before meals. After five days, take a break for a day or two, then carry on. TRY THIS FENNEL RECIPE From www.lifeisagarden.co.za FIVE OTHER WAYS WITH FENNEL Use the leaves in salads and as a garnish or to flavour salad dressing. Instead of sage, use fennel in stuffing for chicken. Add roasted fennel seeds to stir-fries and savoury fried rice Braai fish on a bed of dried fennel stalks Mix shavings of raw Florence fennel bulb with avocado and other salad greens. Peeled orange segments complement the taste. ROASTED FENNEL RECIPE Sprinkle some olive oil over half-cut fennel bulbs, season with salt and pepper and bake in a hot oven at 200 C for about 15 minutes, until cooked through. Taste of Morocco Touria Vally, well known Moroccan chef, shares some of her delicious recipes with us. LAMB TAGINE INGREDIENTS 500g lamb neck and shoulder (cut into 4cm pieces) or shanks if you prefer 3 tablespoons of olive oil 1 large onion, sliced finely 2 large cloves of garlic, peeled and crushed 1 mixed bunch of parsley and coriander, tied into a bouquet 1 teaspoon ras el hanout 1 teaspoon cumin ½ teaspoon crushed saffron threads 1 teaspoon saffron powder 1 teaspoon ground ginger or minced fresh ginger 2 cups of water 1 cup of pitted prunes ½ cup almonds, slivered ½ cup freshly toasted sesame seeds METHOD Preheat the oven to 200 degrees. Sweat the onions in olive oil over medium heat in a large pan on the stove until transculent. Add the garlic and stir until fragrant (about 5 minutes). Add the lamb and brown all sides of each piece. Transfer the lamb, onion and garlic to an ovenproof dish or tagine. Add the rest of the ingredients on the list,up to the 2 cups of water, and stir. Cover with a lid and place in the preheated oven. Simmer for one to 1 1/2 hours(covered) depending on meat tenderness. Check the seasoning, add salt and pepper to taste. Add the prunes and the almonds and stir. Return the tagine to the oven uncovered for a further 30 minutes. The sauce should reduce to what appears as syrupy onions and oil. Remove the parsley and coriander bouquet. MOROCCAN COUSCOUS INGREDIENTS 1 ¼ teaspoon ground cumin ½ teaspoon ground ginger ¼ teaspoon ground cloves 1/8 teaspoon ground cayenne pepper ½ teaspoon ground cardamom ¼ teaspoon ground coriander ¼ teaspoon allspice 1 tablespoon olive oil 1 red onion, cut in half and thinly sliced 1 red or green pepper, chopped into small pieces ½ cup sultanas 1 tin chickpeas, drained 1 teaspoon salt Grated zest of 1 orange 1 ½ cups chicken broth ½ cup orange juice 1 ½ cups couscous 3 tablespoons chopped fresh mint METHOD Place a large, heavy-bottomed pot over medium heat. Stir in the cumin, ginger, cloves, cayenne pepper, cardamom, coriander and allspice. Gently toast until fragrant, about 2 to 3 minutes. Stir in oil and onion, cook until softened. Stir in the pepper and cook for 5 minutes. Stir in the sultanas, salt, orange zest and chickpeas. Pour in the chicken broth and orange juice, turn the heat to high and bring to a boil. When the mixture is boiling, stir in the couscous and remove from heat. Cover, and let stand for 5 minutes. Fluff with a fork and fold in the chopped mint. MOROCCAN MARINATED OLIVES INGREDIENTS 1/2 tsp crushed red pepper flakes 1/2 tsp ground cumin 2 tablespoons finely chopped cilantro 2 tablespoons finely chopped flat-leaf parsley 3 cloves garlic, finely chopped 2 tablespoons lemon juice Chopped skin of half a preserved lemon, rinsed 1/4 tsp salt 1/2 cup olive oil 3 cups green and black olives METHOD Combine the spices, herbs, garlic, and lemon juice in a bowl. Pour the olive oil in a steady stream, beating it into the spice blend. Toss the olives in this marinade. Put olives and marinade in clean jars, seal, and refrigerate for 1 to 2 days before using.
