Unique source of marine collagen Hoki (Macruronus novaezelandiae) skins were obtained from a commercial fish processing factory (Sealord Group Ltd, Nelson, New Zealand). The skins are cleaned of adhering scales, muscle, fat and pigment. After thorough rinsing in water the skins are mixed with 0.5 M acetic acid (approx. 100 g skins per L acid) to extract the collagen. Hoki skin collagen has a low imino acid (proline and hydroxyproline) content (147 residues/ 1000 residues) compared with collagen from skin of calf (Bostaurus) (232/1000) and that from the temperate fish, carp (Cyprinus carpio) Extraction process provides α-chains, electrospinning forms Type I&II collagen fibrils
