(30 mins) The Grader 15 For those with less need for style advice, the grader service provides one grade all over cut with electric clippers, to include a shape up around the edges and neck line. 5 THE ART OF GREAT COFFEE WITH SEVENTH SEAL Coffee should never ever just be coffee. Which is why we use an alchemic process in measured dose, temperature adjusted water pressure and a little touch of magic to get the best from our beans. We use coffee from roasters all over the world in order to showcase the best beans that are on offer. We have a viligant criteria to satisfy before we will consider it. Firstly we look at the ethical nature of the importer which is important to us. As much as humanly possible we will try and source directly traded coffee beans because then we know that the farmers are getting a fair price. We believe a happy farmer will, generally, produce a better quality coffee. Secondly, we will only ever buy coffee grown more than 1500 meters above sea level. Altitude has a huge part to play in the development of the coffee cherry and that leads to a fuller, more developed flavour in the cup. Milk is as important to the process as the coffee we only use organic unhomogenised semi-skimmed milk from a single heard of Jersey cows. Luckily we found a dairy farmer called Geoff at Ivy House Farm and his cows have become an integral part of what we do. TRAINING & WORKSHOPS We will happily bore you for hours on end about the coffee and milk and why we do the things we do. So if you have any questions then please ask us to explain.
