Because the recipes curated by our Director of Education, Robert Siebert (who is also a Le Cordon Bleu trained chef) were such a hit, we ve invited him back to share fresh new bites and sips in 2016! Get ready to cook! LEEK & POTATO SOUP WITH PORT Serves 12 Ingredients: - 1 ½ - 2 lbs. of leeks (white and light green parts) well rinsed and chopped - 1 to 2 onions chopped - 4 large potatoes (2 ¼ lbs) peeled and cut in large dice - 1 stick unsalted butter- quartered - ½ cup port wine - 46 oz. chicken broth - 4 cups water - 1/8 teaspoon cayenne pepper - ¾ c heavy cream - ¼ lb good Gorgonzola cheese (crumbled) - Salt & Pepper 1. In a large pot, saute leeks with onions (6 cups) in butter. Cover and cook for 10 mins, stirring once. Uncover pot and cook until golden (25 mins). 2. Add port, chicken broth and water, bringing it to a boil. Add potatoes and cayenne, reduce heat and cook partially covered (20 mins) until potatoes are tender. 3. Puree the soup in batches in a food processor until smooth. Return to the pot. 4. In the processor, combine the gorgonzola and cream. 5. Reheat the soup to a boil, then lower heat. Add gorgonzola cream, season with salt and pepper and serve. Pair this dish with an elegant and stylish Beaujolais like the one from Louis-Jadot!
