As I write this message, it has been just over one year since we reopened the hotel following our ten-week major refurbishment project. Our revitalised guestrooms, restaurants and Executive Lounge have refreshed hundreds of guests, and our new Vista Lobby Bar Terrace has become a most sought-after space on which to sip a cocktail or coffee, and enjoy a light snack while gazing out to the Mediterranean. Not content to rest on our laurels, however, we are always looking at new ways to keep our product fresh and attractive, and I shall look forward to keeping you updated with our plans and achievements in this respect. Meanwhile, we have our usual busy summer season to prepare for, and our teams have been hard at work ensuring that families visiting Malta for a well-deserved break in the sun will find everything they look for at the Hilton Malta. Our Kids club will engage our younger guests for many hours, with fun, interesting and exciting activities. Parents can drop off and pick up their children on flexible arrangements, and kids menus will also be available so parents can have a relaxed day by the pool, knowing that their young ones are happy, occupied and taken care of in every respect. Our Merkanti Beach Club and Bistro is also geared up for a new season. During summer 2017, this outlet will open to cater for all our guest needs, and families in particular can enjoy the pools at leisure, rounding off a relaxing day with poolside cocktails or coffee. 16 Introducing TheSARTOlife he Malta-based luxury retailer SARTO has recently launched a glamorous Tcampaign to mark its fifth anniversary entitled The SARTO Life and we absolutely love it. Expressing the emotion and history of the prolific brands exclusively represented by SARTO, the campaign exudes glamour alongside a distinctive Maltese flavour. The narrative positions keep Malta at the heart of the campaign and tell the tale of the most glorious summer through four key quintessential local themes that include: It-Tieġ (The Wedding), ll-festa (The Feast), Ix-Xemx (The Sun), Il-Baħar (The Sea). The SARTO Life was shot at various locations around the island namely Villa Arrigo, Café del Mar, as well as the villages of Kalkara and Birgu and was headlined by internationally celebrated Hungarian model Misa Patinszki. Misa is a favourite of the great Domenico Dolce & Stefano Gabbana and has starred in a number of their campaigns and runway shows. Prior to becoming the face of Sarto, Misa worked with Bottega Veneta, Hugo Boss, Jean Paul Gaultier, Ermengildo Zegna, Thierry Mugler and Dsquared2, as well as having been featured in big fashion publications such as Vogue, L Officiel Hommes and Wonderland amongst others. Also starring in the campaign is the stunning Corina Corduneanu, whose charisma and exotic features not only complement Misa and the Mediterranean feel of the campaign, but have also helped her secure an impressive portfolio working for brands like Dolce & Gabbana. Local Model Stephanie Hodgkins is well known to the Maltese public for her extensive contribution to local industry; Stephanie has recently made her return to the fashion world after giving birth to a baby boy. Completing the line-up are Pedro Jorge Lemmos, an international Portuguese model who has previously walked for Sarto, and the dashing footballer Michael Johnson who plays for St Andrews FC. The campaign was shot by popular Maltese photographer Kris Micallef who is without doubt one of the country s great undisputed artistic talents. Belgian Fashion Director Eli van Poeyer who has worked for Marie Claire, InStyle, Glamour and Cosmopolitan and has styled the likes of Rihanna. Hair and make-up were in the hands of Remi Hairdressing and Chris Simpson respectively. As part of the campaign s in-store activation, the scenes depicted in the campaign images are being recreated in the SARTO window through a series of custom installations created in Rome. #TheSartoLife ROSS STREET, ST. 18 Across Malta's Catwalk FOLLOWING THE SUCCESS OF THIS YEAR S MALTA FASHION WEEK, FASHION BLOGGER CAROLINE PARIS SHARES THE LOW-DOWN. The Mercedes-Benz Fashion Week Malta found a new home at Fort St Elmo this year. The venue catered for all the different events including exhibitions, catwalk shows, presentations and parties. The culmination of the event was the Chamilia Malta Fashion Awards, which as in previous years attracted a large audience of all ages. Fifteen local designers as well as four international designers exhibited their talent and creativity throughout the week. The event attracted both local and international guests, many of whom expressed surprise at discovering how much talent Malta s fashion designers have to offer. An interesting point about our local designers, and one that was highly evident throughout the week, was that they all produced something very different and unique from one another. Another point worth mentioning was the evident increase in quality over the years. These collections were not some after-work project, some of the designers have trained in foreign fashion colleges, and even those that have spent numerous months researching and seeking inspiration before deciding what their collection would look like. The clothes in each collection are very wearable and actually pretty covetable, as was evidenced by the large number of people wearing local designs from previous collections in the audience. It is impossible to mention each and every designer who exhibited in this article but here are some of the highlights. Carla Grima was a definite crowd pleaser with her vivid, vibrant prints and colours. She presented her collection in a stimulating presentation format that evoked the feeling of summer and lazy days spent by the sea. The title of her collection is Abloom and it is quite a playful and fun collection. Everything feels highly luxurious, high-quality fabrics were used to create kaftans, palazzo pants and of course her popular range of swimwear. Ritienne goes from strength to strength with her fearless choices. She presented a collection inspired by our beloved capital city Valletta, aptly named I Love Valletta. This in itself is a reflection of Ritienne and her creativity. Her work has been described as multi-dimensional and generally requires a couple of viewings to be properly understood and appreciated. The incorporation of historic elements into her prints along with her use of different colour combinations all provide so much food for thought that the whole thing transforms into an artistic story. Gaetano, currently one of Malta s favourites after his work with Malta s Eurovision singer Claudia Faniello, showcased a range of dazzling dresses and jumpsuits designed to embrace the female form and lend a feeling of empowerment. His greatest strength lies in creating designs that women are really excited to wear. The pieces combine both elegance and sensuality in a way that is never tacky. His collection titled Divas takes a bow towards female musicians such as Cher, Mariah Carey, Beyoncé and others who he cites as inspiration for his collection. This is the sort of woman Gaetano imagines in his pieces. Malta Fashion Week provides a platform designed to showcase and nurture local fashion talent in Malta. Not only in terms of fashion designers but also for photographers, stylists, bloggers, hair stylists, makeup artists and many more. All are given a chance to get involved and all are given exposure. Another successful edition has come and gone but for all involved this was a chance to meet new people, forge connections and look ahead to many more exciting things in the years to come. 20 THE ART OF ĠOXWA P ROF. PAUL SANT CASSIA DISCUSSES WHY LEAVING IS IMPORTANT FOR AN ARTIST IN THIS ONE-TO-ONE INTERVIEW WITH BUDDING ARTIST ĠOXWA. Few Maltese art cognoscenti may know of Ġoxwa, and even less our luminaries. Yet this Maltese artist has long been established in Paris where she has been exhibiting regularly for many years and indeed is one of the most expensive and sought-after contemporary artists currently exhibiting there. In this contradiction lies an important lesson about art and artists: that a young and aspiring artist must often leave his or her natal home and travel to the metropolis to seek inspiration, challenges and above all, risks. Risk is probably the single most important challenge facing an artist: the risk to innovate, to discover one s inner voice, and above all to discover oneself. In art, to discover oneself is as challenging - and often as painful as psychoanalysis. One does not discover oneself in a serendipitous selfindulgent exploration of whims and fantasies, nor in some extended touristic search for visual stimulants. That can come later. But to begin it is sometimes essential to be away, to be stripped bare of the psychic comforts of one s environment where every self-indulgent artistic fantasy or shallow exploration of some visual theme is welcomed with gushing admiration, and which does as much damage to the recipient in its Risk is probably the single most important challenge facing an artist: the risk to innovate, to discover one s inner voice, and above all to discover oneself. ĠOXWA IS REPRESENTED IN MALTA BY LILY AGIUS GALLERY (+356) OR cloying adulatory suffocation as it demonstrates the insecure undiscriminating provinciality of the person praising it. In the history of art, painting, literature and even science, we know that natal environments are little islands - literally or metaphorically reassuring, but deadly to the artist. Most artists had to travel, that is to lose themselves to discover themselves. Easier said than done: few people manage to lose themselves and even fewer find themselves for finding is making, not some opening of a Russian Doll or the peeling of an onion. And this is as true in today s globalised world as it was in the sixteenth century where most artists were known by their geographical origins which they abandoned never to return: from Merisi (i.e. da Caravaggio ) to Poussin, from Cezanne to Picasso and Antonio Sciortino yesterday, and to Marina Abramovic today. That is what made them world artists in contrast to local or provincial ones. Few, indeed, of their natal communities actually possesses any examples of their work. Art is movement, but movement outside the mover. And in its modest way, the story of Ġoxwa is part of that pattern. Disappointed with the local art scene and intuitive that had she to remain here she risked HILTON CALLING 18

21 losing herself for her doppelganger, she left Malta years before the pearly gates of the European Union opened for Maltese, to study at St Martin s School of Art in London, and then at Emerson College, Boston. After a number of years in the US she moved to Paris. That city of art was not easy for a young woman. Many artists dream to find good galleries to exhibit in, but the Gallerists have seen it all before. The good ones have their hands on the pulse of the art-loving cognoscenti: they are sophisticated, sometimes blasé; but always acutely discerning. Yet Ġoxwa persisted; she worked hard and seriously often in straightened circumstances; slowly developed her vision and technique (using encaustic and recalling the Fayyum portraits) and eventually a perceptive Gallerist in the 6th Arrondisement (where many of the top Art Galleries are located) saw her potential and offered her a show. As Olivier Renault notes, when people pass by her work, they stop and look and in a city where visual stimulation is the currency of existence. Since then Ġoxwa has been sought out by Art Galleries in Paris as well as in New York. Her exhibitions are normally sellouts: an average price for a small canvass is in the region of 15,000. But let us leave the ostentation of monetary prices for those who think that art is an auction of supply and demand, or even for those provincials who might be impressed by high prices as an indication of value and therefore of investment. One purchases works of art because one likes them, because they say something to one. Not a mere illustration, but a narration or a reflection. Is Ġoxwa Borg a Maltese artist or a Parisian one? She is neither but she belongs to both. She has transcended one to make herself, and is therefore not a hyphenated identity. She has her own vision but she approaches her sources from her own perspective. She leaves from her sources, including Valletta her natal city, but does not inhabit her natal land. Yet perhaps her island is still there, its walls and contours seen from the sea in the mists of her memories and in the sketches she makes on her yearly visits to transform them into something rich and strange. 24 EUAN PHILLIPS Food and Beverage Manager During your career, what has your involvement with the Hilton brand been so far? "I have worked with Hilton for 11 years in total and during this time I ve held pretty much every possible role within Food & Beverage. I worked in various properties in Aberdeen and Edinburgh from before moving to Malta. At first I worked with a local company who operate a number of restaurants and bars around the island. The opportunity to re-join the Hilton brand came along in June 2012, which was one that was certainly hard to refuse. I started out as Assistant Food and Beverage Manager and have been more recently promoted to Food and Beverage Manager". It must be difficult to deal with the demands and high expectations of so many guests on a daily basis. How do you deal with it? "Customer preferences and attitudes evolve and we need to react quickly and adapt to those changes as well as to the business environment that is also in a constant state of change". What is your biggest challenge? "Manning for the ever-increasing business level we are experiencing. Ultimately an increase in business is a sign that the hotel is performing well and to a degree outperforming our competition in terms of quality. Being on an island means we don t have access to the same volume of candidates as our other hotels in mainland Europe, and keeping up with that is absolutely a challenge. The help and support of our HR team is obviously critical and we will continue to work in tandem to overcome this challenge". What message would you like to give to potential candidates seeking to join the Hilton Malta Food and Beverage Team? "Anyone joining our team really needs to have guest experience at the forefront of their priorities. Whether our guests are here for a single day or two weeks, we're here to provide them with an exceptional journey, and make them feel welcome and valued. No job role is more or less important than any other. No matter what job role you fulfil within the department you are contributing to ensuring our guests have an incredible experience". MIRYAM DI MARTINO Receptionist What is it about reception work that you enjoy? "My job as a receptionist involves me interacting with Guests all the time and this is what I like best. I love the fact that I am given the opportunity to build professional friendships with our Guests, and welcoming several Guests that return to our property month after month. The trick to getting positive customer reviews is simply being you. I try to be myself all the time. I am honest and open with Guests. We are not robots, and being honest when something goes wrong is always the way to go. I try to build genuine and authentic connections with all of our Guests". How would you describe your career at Hilton Malta? A career at Hilton Malta is a great experience. I describe as the ideal training ground. If you want to experience it all, it s definitely the place to be. Every single day brings new learning opportunities, new experiences, and new challenges. Additionally, I learn something new about life or the world from every single guest I meet. What do you find the hardest? "Front Office is always the first place people visit when they d like to enquire about something or return feedback. It s kind of the hotel go-to hub that s coordinating activity across the rest of the property. This can sometimes be very demanding, and in all honesty extremely tiring. There are a few bad days when everything that can possibly go wrong does, but the good days far outweigh those super challenging days " Why Hilton Malta? "Hilton Malta is one of the leading hotels on the island, as well as in our region. I chose Hilton because it gives me the opportunity to travel the world. I think my preferred destination after Malta would be New Zealand, although I must admit that the sound of Hilton Hawaii also excites me!" What s next? "I would like to progress my career within the Front Office department. This is where my passion lies and I can t imagine myself doing anything else. 25 ANDRE SPITERI Sous Chef on Oceana A La Carte Tell us about your career at Hilton Malta "I have been working here for three years. I started off my career as a Junior Sous Chef and was shortly promoted to a Sous Chef position. My current role includes working mainly on the A La Carte section of our Oceana Restaurant, mainly while leading a team of passionate and exceptional chefs". What do you enjoy about your job? "I love the creativity involved in combining different flavours, colours, textures and tastes. I d like to think of every plate we serve as an individual work of art. My job also allows me to be creative by preparing dishes which taste as good as they look. I am also responsible for mentoring junior chef s on the brigade and passing on my knowledge and skill to them. Apart from that I also get to engage with various guests dining in our restaurants and ensure that they are happy with their experience". How has Hilton Malta helped your development as a Chef? "Hilton has given me the opportunity to participate in various local and international competitions which have helped me advance professionally. I love the high-pressured environment that is part and parcel of a competition and I believe that these skills have made me a better-rounded chef. Additionally, the high expectations of our Guests enable us to continuously innovate and improve on the quality of our food offerings". What about challenges? "The most challenging part of being a Chef is to ensure that each plate leaving our kitchen is perfect and well received by our Guests. Sourcing committed and ambitious Chefs is also very challenging on a small island like Malta where everyone is competing for the same small pool of talent". "I was a student reading for a Master s Degree in Occupational Psychology and part of my research included conducting a series of interviews with managers and team members from various 5-star hotels on the island, Hilton being one of them. That is when I got my first taste of the Human Resources Department and the prominent Hilton brand. I immediately knew that I wanted to be a part of it. During that time a vacancy for an HR Administrator was issued and three interviews later I was selected to join the team". What do you like about your role? "I love the fact that I am involved in maintaining the wellbeing of everyone s employment, which at times includes a personal journey. It s not just a job. Through my work I have had the opportunity to meet team members at the very start of their employment, and along the years have created meaningful relations with several of them". What is the most challenging part of your job? "Firstly my desk. Keeping it in order is always a challenge. It s always messy. But to my credit, I know where everything is. Secondly it s the high-pressure environment required to deliver new team members to the operation, sometimes literally within a 24-hour lead-time! The Human Resources Team is critical in providing the right quantity and quality of team members to our hotel operation and I feel that my role is instrumental to make this happen". Do you feel that the Malta Life, Hilton Living video depicts your own feelings for working within the Hilton Brand? "The feeling I got during the research interviews I was conducting for my studies was that Hilton Malta was one big family. All Team members, regardless of their level or position went out of their way to help me with my research and spoke positively and passionately about their workplace. I am pleased to say that my first impression was spot on and I today feel exactly the same way they had described it to me". Can Hilton fill your future ambitions? "I aspire to keep moving up the Human Resources career ladder, eventually moving into an HR leadership role. I know that Hilton can offer me this opportunity, both locally and internationally. 27 MEET THE CHEFS THEY SAY THAT THE BEST WAY TO GET TO KNOW A COUNTRY IS BY ITS FOOD. DANA BONELLO SPENDS THE AFTERNOON WITH THE FOUR PILLARS OF HILTON MALTA S CULINARY REALM. EDDIE SKARKEY, KEITH VASSALLO, RYAN MARMARÀ AND MARIO MALLIA integration relatively simple, he notes. I think that having worked all over the world gives me an international perspective on things, and I'm hoping to bring some of that to Malta I'm all about trying something new and this seemed like a perfect opportunity! So what about his vision for Hilton Malta? It s all about maintaining the highest levels of quality whilst introducing new flavours and experiences to all of our menus, he calmly shares. I m also looking into a number of international collaborations which will allow our local team to experience living and working overseas for a while, which I feel will really help to push the brand forward. It s all about experiencing the job from different perspectives, I'm a firm believer in that. When asked about challenges, Eddie mentions that produce isn't always entirely available locally. During my time in Malta I ve begun working on a number of relationships with local suppliers, I m interested in getting out there and meeting the farmers, cheese and honey producers to discuss our requirements and create new synergies, placing an emphasis on sustainability and traceability, he adds. At this point I cannot help but wonder what a typical day in the life of the Hilton Malta s Executive Chef would be like. I wake up at around 6am and head down to the hotel by 7:30 to oversee operations for breakfast and the Executive Lounge. I then rally up the team for a quick briefing and generally head out to the hotel to greet some of our guests. I feel that building valuable relationships with both internal team members, as well as guests is crucial to helping us maintain our standards. Anyone who knows me knows that I'm all about food, so I couldn t have been more excited to meet up with the top chefs at Hilton Malta and discuss what makes the brand so unique in terms of catering. First up, I had the pleasure of meeting Eddie Sharkey, the newly appointed Executive Chef who took over after Joe Vella who retired earlier on this year. A bon vivant with a thick Scottish accent, Eddie s relocated to Malta a couple of months ago with his wife Marylin and since then has begun working on a number of projects. Eddie explains how he s worked and lived in various countries all around the world including Nigeria, Egypt, Ethiopia and Scotland, and after spending over 12 years living outside of Europe it was time to come home. So what was the transition like? Being a part of an international franchise means that many systems are already in place, this makes Eddie explains how menu development is also another important aspect of his job and goes on to detail the ideology behind it. You need to really live the Malta lifestyle in order to understand it to its full. Personally I m not a big fan of trends, those come and go, but what really counts is getting out there and finding out what people really want. Ultimately, we re here to offer the best possible experience to each and every guest. Having said so, we like to reinvent ourselves at every level starting from a la carte and ending with our buffets, and I think that s all part of what makes the Hilton, 'The Hilton'. 29 Next up was right hand man Keith Vassallo, Hilton Malta s Head Chef who has been working at Hilton Malta since it s reopening back in Humble and soft-spoken, this man s passion for what he does is undeniable and his enthusiasm is contagious. I started out as a young chef de partie and worked my way from the bottom up, he explains. I ve probably held every role along the way at some point, but I must admit that it s been a fantastic experience and I ve had the pleasure of meeting and working with some incredible people." Nowadays my role majorly revolves around management which includes organising schedules, planning out work, being involved in the creation of new menus, overseeing preparations, as well as the day to day running of our kitchens; I like to keep myself busy he jokes. I must admit that I do miss the hands-on cooking aspect of the job sometimes, which is why I always lend a hand from time to time. I was in the process of making a curry right before you arrived! Keith explains that despite the several challenges in today s catering industry, his job rewards him with immense career satisfaction. There s always going to be that one bad day, it s either one thing or another it s inevitable, but it s also really hard for me to describe the incredible gratification we get out of it. Sometimes we come across some extremely high demands, however I ve always believed that it s our job to make sure that each guest receives the Hilton experience we are so proud of. So does being part of an international franchise limit culinary creativity? We always focus on offering seasonal produce with a local twist, however I m always impressed at how far our chef s creativity can go sometimes. Of course change is what keeps us ahead of the game and we re always up for something new. Right now for instance, I ve been working with Eddie on revising some of our menus, as well as working on an entirely new menu for the Merkanti Beach Club restaurant right before the summer season kicks off. In conclusion? Overall I m extremely thankful for this unique opportunity. I am very greatful to Joe Vella who was my mentor along the years, and consistently supported me and encouraged me to move forward. Of course, I'm extremely excited to be embarking on this new adventure under the formidable guidance of Eddie Sharkey. 31 Next up was Ryan Marmarà, who apart from holding the role of Executive Sous Chef here at Hilton Malta, also plays football at a semi professional level for a local team. Ryan explains how he recently joined Hilton Malta four months ago after having taken a five-year break from the hotel. Ambitious, and definitely easy on the eye, this young chef started his career in catering at the age of 16 and as the old saying goes, has never looked back. I always knew I wanted to be a chef, he explains. I have a huge passion for food in general and am always interested in keeping abreast with the latest trends and techniques. When asked why he chose to return to Hilton Malta his reply is simple. I genuinely believe this hotel is the best in Malta, and this includes the brand itself as well as the continuous backing from its owners. This constant investment and support means a lot to us and is ultimately reflected in all of our products. Ryan relates how despite the lack of chefs available in Malta, Hilton Malta is blessed with a team of 60 chefs who are mostly locals. It s important for us to include the Malta factor in all of our operations, he mentions. We like to offer guests the opportunity of experiencing something authentically local during their stay with us, and this is reflected in all of our menus. We give special attention to the finest of details in order to deliver an experience every time rather than just a simple meal. That s really important to us. Interestingly, achieving excellence seems to be embedded into this young chef s genetic code. Several-time award winner Ryan has formed part of he Maltese culinary national team for the past nine years. I ve won several major local awards including Junior Chef of the Year and Chef of the Year' along the years, along with two bronze medals in the Culinary Olympics and the Culinary World Cup as part of the Maltese national team. I have competed in a number of countries around the world earning an additional three silver and four bronze medals along the way in various competitions. Through the years I ve had the privilege of working alongside some top local chefs in the industry and am forever grateful to my mentors who have coached me and guided me along this incredible journey. I believe that one can never stop learning, and I m looking forward to what the future holds. 32 Just as dessert is always served towards the end, so is my encounter with Mario Mallia, the Executive Pastry Chef at Hilton Malta. Entering the realm of pastry and confectionary at a very young age, Mario fondly recalls his first job working at a small local outlet to earn some pocket money while he was still in school. I got my first job when I was around 15 or 16 but I had been involved in the industry a couple of years before that, he chuckles. I eventually decided to take the plunge and formalise my education and entered my first competition where I presented a series of French pastries and a butter sculpture. I won the first two gold medals of my career and instinctively knew that this is what I wanted to be doing for several years to come. Since then Mario has come a long way and his charisma and impressive portfolio are both testimony to this. Today he is responsible for heading the pastry section at Hilton Malta. My role nowadays is pretty divided, there s the managerial aspect, as well as the hands-on approach, and to be quite honest I love the balance. I ve always felt that my place is on the work floor creating new dishes and interacting with other chefs rather than sitting behind a computer, however I do enjoy mentoring others and watching my chefs grow; gives me incredible job satisfaction. I m also thankful to be surrounded by a team of hardworking and inspiring people. We all take pride and responsibility for what we do and there s a great synergy going on between us. Mario explains how the thought process behind a simple dessert goes way beyond what one might assume. It s all about the experience, he explains. Ingredients, textures, flavours and plating all go into it, we re way beyond serving a slice of cake or a scoop of ice cream, he jokes. Watching the main course being served is always the highlight of my evening, because I instinctively think it s show time there s nothing more rewarding than watching guests enjoy their final course and rounding off the evening with something special and that s our desserts. Baking is almost a science and precision is of utmost importance, there are no half measures it s about being completely focussed all of the time, he explains. Ultimately getting the job right is a delicate balance between great equipment and even better people and I feel blessed to have both, he warmly concludes. 42 Meet me at the Vista WE SPENT A WHOLE DAY IN THE VISTA LOBBY BAR AND LOVED IT HERE S WHY. Written by Dana Bonello Following Hilton Malta s extensive refurbishment towards the end of last year, the Vista Lobby Bar is one of the areas which received a complete overhaul to complement the hotel s new style. Pastel blues and pale greys contrast the warm wooden floors while stark stainless steel chandeliers and the large bay windows located towards the end of the bar shed bright natural light throughout the entire foyer. Located on the ground floor at the Hilton Malta, the Vista Lobby Bar is an ideal spot to wind down after a long day, catch up on s over a light lunch, or simply sit back and enjoy the view from the sprawling terrace overlooking the Mediterranean sea. Throughout the production of this magazine I have made use of the Vista for various reasons at different times of day and here s what I ve got to report. First and foremost, it comes as no surprise that the Vista is a great place for business. Apart from the general networking that tends to happen in buzzing spots such as this, it s centrally located, offers adjacent parking facilities, and serves a frappé so amazing you re definitely going to want another. If you re an early bird I d really recommend going for a fresh croissant on the side; they say carbs don t count before noon anyways. Once you re done with your meetings, there s generally nothing better than to focus for a couple of hours and catch up on your mail. If you re working on a laptop I d recommend choosing one of the lower tables, it will allow you to nestle in comfortably into one of the armchairs without the need to stretch out too far another frappé anyone? 43 If you happen to be meeting around lunchtime you re also in luck. I d recommend heading out on the terrace for these encounters whether they re for business or for pleasure. The lunch menu is varied and there s also a specials menu that s updated regularly. We opted for the lamb koftas served with crispy pita bread, cucumber strips and a delicate mint sauce, the spinach salad served with parma ham and glazed peaches and the slow roasted pulled pork served with fried egg, crispy rosti potatoes, spinach leaves and a silky hollandaise sauce. Having said so, I must admit that afternoon tea was probably my favourite treat on the Vista s menu, which is why I quite enjoyed catching up with friends after work out on the terrace after a long day. Expect a lavish display of fresh sandwiches and delicious pastries including the cutest miniature scones in town; complete with jam and clotted cream of course. Macarons, coconut truffles, mint and chocolate mousse bars, and too many cake varieties to mention are displayed side by side in a gorgeous arrangement and served with a steaming pot of tea or a crisp glass of prosecco if that s more your style. Call it a night with a single malt on the rocks and you re definitely onto something good. We seat ourselves on one of the comfortable couches as a waiter takes our order. I opt for a rosemary gin infusion, whereas my partner left it in the barman s hands to mix up something special. Needless to say, it was absolutely delicious. As we watch Damien, the barman on duty at the Quaterdeck work on his alchemy, I find myself being transported into the past, to a time where glamour was the order of the day and the tinkling of champagne glasses and bold jazz tunes where precisely what nights out where all about. MATTHEW B SPITERI KRISTA ZAMMIT MARMARA PENELOPE TABONE CARINA CAMILLERI PHOTOGRAPHER MAKEUP ARTIST SENIOR STYLE DIRECTOR STYLIST Matthew Spiteri has progressively garnered a steady following in the fields of fashion, portraiture and food photography and was recently awarded Best Fashion Photographer 2017 at the Mercedes Benz Fashion Week Malta. His professional no cutting corners ethos stems from his fond passion for photography, whereas creativity and nonconventional reasoning generally afford his photos a distinct flavour. Matthew is known for his forward thinking as well as his scrupulous attention to self-improvement. Krista specialises in fashion, airbrush and theatre makeup. To date, she has formed part of dozens of photo shoots, TVCs and theatre productions, both locally and abroad. Krista also participated in Malta Fashion Week and MQ Vienna Fashion Week as makeup artist and team leader on several occasions. She forms part of the VENERE team and was the official makeup artist of Malta's most successful TV drama, Strada Stretta. Krista was nominated for Fashion Makeup Artist of the Year several times, and won the award in Penelope has been in the hairdressing industry for over 20 years and is director at TONI&GUY. She is artistic, passionate, creative, fashion focused and ambitious. I believe a great hair style can have a dramatic impact on a person's wellbeing. It is important to be patient in order to create the perfect haircut and colour for every client. It is also important for clients to trust their hairdresser and I am also committed to building this relationship with all of my clients. I always say you can have the right outfit and makeup but if your hair isn t right you don t feel right. Carina is a self-taught fashion stylist with over 20 years of experience in the industry. She is the owner and director of Malta s leading modelling agency called Models M and has organised several fashion related events over the years. She also indulges in buying designer wear and is addicted to online shopping. Carina adores dogs and dreams of living on a farm with lots of animals whilst taking on many strays. He created a Clash of Seasons theme, putting together a storyboard consisting of opposites in terms of looks and overall feel. 64 A TALE OF THREE CITIES Mostly undiscovered, the Three Cities offer visitors a slice of authentic life as well as a glimpse into the island s maritime treasures. Collectively known as the Three Cities or Cottonera, the towns of Vittoriosa, Senglea and Cospicua offer travellers an intriguing insight to Malta and its history, despite never being mentioned on the first pages of any local guidebook. 66 COSPICUA - BORMLA SENGLEA - l'isla VITTORIOSA - BIRGU Representing the largest of the Three Cities, Cospicua was previously known as Bormla and was subsequently renamed by the Knights of Malta due to the brave and conspicuous role its people played during the Great Siege of Today, the older dockyard, which is currently undergoing extensive restoration, occupies most of its shoreline and development works. This city suffered extensive damage during WWII, and despite being heavily rebuilt there are fewer residents now than in pre-war years. Keep an eye out for the Collegiate Church of the Immaculate Conception that is rich in fine pieces of art, as well as the Firenzuola Fortifications and the Margherita Lines that both formed part of the inland defences of the areas. Also going by the name L-Isla, this diminutive city stands proudly on a narrow promontory that juts out into the Grand Harbour. The city owes its more recent name to Grandmaster Claude de la Sengle, who fortified the medieval city in It s former name, L-Isla is believed to have derived from a variation of the word peninsula. During the Great Siege of 1565, Senglea received protection from the neighbouring forts of St Michael and St Angelo, however it wasn t as fortunate during WWII with several of its buildings being demolished during the war. This city is best known for its impressive harbour views from the Safe Haven Gardens at the peninsula s foremost tip, as well as the stone vedette known as il-gardjola located along the bastion walls that once served as a look-out post garding the entrance to the harbour. Lying right across Valletta, Vittoriosa houses Malta s oldest fortification Fort St Angelo. Its strategic position has been recognised several times throughout history, which has led some to refer to this specific area as the cradle of Maltese history. Birgu served as the base of the Order of Saint John and de facto capital city of Malta from 1530 to To honour the grand part this city played during the Great Siege, Grandmaster Jean de la Valletta chose to rename this city from Birgu to Civitas Vittoriosa the victorious city. Today, Vittoriosa houses some of Malta s most splendid architectural sites as well as the prominent Church of St Lawrence, the Inquisitor s Place, the Maritime Museum, the Birgu waterfront marina, as well as the stunning Fort St Angelo. 71 ONWARDS AND UPWARDS DANA BONELLO CATCHES UP WITH MARIO MORANA, ASSISTANT CHIEF ENGINEER AT HILTON MALTA WHO UNDERTOOK THE KILIMANJARO CHALLENGE EARLIER ON THIS YEAR. The Kilimanjaro Challenge is a yearly expedition that sees a group of local adventurers off to Tanzania to climb the 5,895m volcanic peak in aid of charity. Known for its philanthropic work throughout the years, the Kilimanjaro Challenge has raised over 600,000 in funds that have been allocated to seven separate projects in Kenya and Ethiopia. This year, it was up to 18 Maltese individuals who took it upon themselves to climb the mountain whilst raising funds for the 'Chris Criminale Kindergarten School' in Ethiopia that s run by missionary movement Moviment Ġesu fil-proxxmu (Jesus in thy Neighbour) as part of KC10. So what inspired Mario to undertake this intrepid quest? I had originally planned to run a marathon but that was delayed after sustaining an injury, he explains. I had heard of the Kilimanjaro Challenge and fancied the idea of trying something new so I joined the team, and as they say; the rest is history! Mario explains how the run-up to the actual climb included a year of very hard work, both in terms of the physical challenge, as well as the extensive fundraising required to build the proposed kindergarten school. Typically, training would generally occur over the weekends and would include four to five hour treks carrying a loaded backpack. Sometimes we d also go bouldering in the Northern parts of the island which involves scaling the coast over large rocks. Mario shared that apart from building stamina to be able to endure the hardships of the actual climb, this training was also an essential team building activity that allowed the volunteers to bond amongst themselves. In the beginning we were 18 strangers who had never done anything of the sort before but all shared a common goal. It must come as no surprise that by the end of KC10 some incredible friendships were formed, he chuckles. I am extremely grateful to Hilton Malta for this opportunity, Mario recalls. I received a lot of support from my colleagues throughout this past year, both in terms of time as well as several fundraising activities held along the year. It s for this reason that I chose to represent the Hotel upon reaching the summit, I felt that I owed them every bit of recognition after completing this feat, he fondly notes. Mario explains that the Maltese KC10 team were flown out to Tanzania last January and caught up with their leaders in Marangu, a town located in the Kilimanjaro Region. Here we prepped for the climb before making our way to the Kilimanjaro Park to start the climb of a lifetime that would take a total of six days to complete. Mario recalls a couple of challenges he faced along the way, such as the unfavourable weather conditions that grew increasingly colder the higher HILTON CALLING 69

72 up they climbed, as well as the restrictions brought about by sharing a two-man tent with another person and both their luggage. It was extremely physically demanding, and when coupled with the extreme cold and lack of oxygen I must admit that there were moments when I doubted my capabilities of making it to the peak, he mentions. Altitude sickness is also something else I had not entirely taken into consideration, Mario relates. It s something you have absolutely no control over irrelevant of how fit you actually are, and as you can imagine, the higher we went the weaker we became. There were times where even performing basic functions such as wearing a jacket or tying a shoelace proved to be an issue. I d have never imagined it would have been so tough despite all the training we went through in preparation. Mario recalls how Summit Night was the toughest day of all. It starts off at around midnight in sub-zero temperatures and pitch darkness, and includes the steepest climb of all with an estimated peak time of 8am. This pretty much translates to eight straight hours up a very steep hill with barely any oxygen. Just to give you an idea of how cold it actually was, our water bottles froze entirely on the way up! Of course, reaching the top must have been an indescribable experience, here s what Mario had to say. Standing at the highest point in Africa at daybreak is really something else. It was an incredibly emotional moment where I was flooded with gratitude. It was an amazing experience that definitely made up for all its previous hardships in the blink of an eye, he smiles. Mario then explains that after the seven-day climb, the KC10 party made their way to Ethiopia to visit the site where the kindergarten school had been built. The climb was a fantastic challenge, but visiting Ethiopia was really something else, he notes. The environment, the way of life, being able to spend a couple of days living like a local really puts things into perspective. It s absolutely different to anything I ve ever been exposed to before, it was truly incredible! Would you recommend this challenge to others? It s definitely not an experience I d recommend to anyone, but it s a lifetime experience I will absolutely never regret having gone for so if you re up for a challenge, and able to commit, then it s an adventure you re going to absolutely love from beginning to end.
